Windows 2000 can have the AppleTalk protocol installed which would allow that computer to print to a printer speaking AppleTalk. I'm just not sure though about your situation if that would be enough or if you would need the Services for Macintosh where a print queue would be made and then that print queue would broadcast itself via AppleTalk so that Macs could print to it. For that I believe you would need the Server version of Windows 2000. When you install Services for Macintosh you also get Print Server for Macintosh.
