Thomas, I would highly recommend Great Plains Dynamics (Faircom C/S) for
your accounting program (you can host it in an NT box or a Mac and the
clients can also be of either platform). Very flexible, reliable and
fully graphical, with the same interface across platforms.

As far as scheduling, my first recommendation would be Lotus Notes and
Microsoft Exchange 5.5 as a distant second.
