I'm not an NT Server or Exchange expert, however, you should be able to
configure the Exchange Server to support POP3 mail. In which case you can
use any POP client on your Macs.

As far as interoperability of the Mac and PC Outlook clients, you should not
think of Outlook Mac as Outlook, but as Exchange 5.0 with a slightly updated
version Schedule+. If you need to have Mac and PC users sharing schedules,
it is pretty useless.

The SP1 version of Outlook has been pretty reliable for me (and our Mac
users). A lot less trouble than either Exchange 5 or the original version
of Outlook for Mac.
