[WinMac] MS exchange server encoding?

i have a client using the Exchange server and outlook on both the windows
and macintoshes. we are having a problem sending files interoffice from
the macintosh to the windows side...they are getting encoded into format
windows cannot understand...even if we switch the encoding on the
macintosh client to something none maclike (like MIME).

is there a server setting for properly endcoding files for interoffice
communications?
i'm their macintosh consultant, so i don't touch the exchange server, but
if i have a direction to point the wondws guys in it would be great. they
claim this is a macintosh poulook client problem.

any help is appreciated.
