I can vouch for your problem above. I've given up doing this too and head
for the nearest mac to create folders on SFM volumes.

Also, regarding your erratic speeds, we had similar problems here. Our
server was setup with memory being optimised for throughput for Network
Applications (SFM being an application). However, we soon changed this back
to File Sharing being optimised, as the Color Central software (print
spooler) seemed to gobble up resources and slowed network performance. Our
other speed problems used to steadily increase during the day, peak at
about 2-3pm and then get better after that. Obviously this was linked to
increased usage, but speeds of 100k were ridiculous. A quick visit by a
network consultant equipped with network sniffer pointed to the network
card on the server generating too many FCS errors. Having changed the card,
the world's beautiful again.
