Dustin:

Yes, PCE 2.2 should allow you to see PC long file names with System
7.6.1. However, our lab has had serious problems with PC Exchange 2.2
(on G3s with OS8.1). Numerous PC-formatted disks have failed
utterly---general corruption and instability followed by dancing icons
and radically incorrect file copying (we do not have an NT server, by the
way) leading to a disk that won't mount on any system. Downgrading all
of our OS 8.1 machines to PC Exchange 2.1.1 seems to have solved the
problem. We can live with truncated long filenames.

I mention this because I suspect that part of the problem is that while
PC Exchange can now handle long file names OS8.1 is not yet fully
long-filename compatible, so the OS can periodically conflict with the
control panel. This incompatibility might be magnified with OS 7.6.1.

I would wait for the update to PC Exchange due out (reportedly) with
OS8.5 this September.
