i would take a serious look at IPNetRouter: http://www.sustworks.com/

Runs on the Mac. Should work fine on a Quadra. Decent documentation.
Seemed easy enough to set up. i just followed the instructions.

You'll need to have Open Transport (at least System 7.5.5 should
do the trick.) Cheaper than Vicom for 6 computers. Purportedly
faster because it runs under Open Transport.

IP Masquerading (Linux): http://ipmasq.cjb.net/

Personally, i'd put it on the Mac w/ IPNetRouter, because it's a great
way to use an old machine and dedicate it to one purpose. Putting it
on one of the Wintel computers is dangerous, because if the person
using that box has to reboot for whatever reason, *boom* there goes
your Internet connection. :P
