I'm not a networking expert but I believe you need to shut down anything
that could be replicating the zone for say 10 minutes and then seed the
zone with the NT Server. That would mean all Macs, any AppleTalk printer,
etc. Regarding the JetStream you may need to reconfig something in there
as it might have a prefs file or something that's remembering zones.

We used to seed our Mac zone using a Novell server. When we introduced an
NT server I later switched the seeding job over to the NT Server with the
Novell server still running but not seeding anymore. Of course I had it
easy as I already had a Mac zone and I used the same name when I switched
over.
