I can't disagree that Outlook is a mediocre product. However, I find that
having my email on my Mac (instead of my Windows PC) is a benefit that
outweighs the clunkiness of the program.

The latest version of Outlook for Mac can be found at:

ftp://ftp.microsoft.com/bussys/exchange/exchange-public/fixes/Eng/Exchg5.5/S
p1/Mac/

This is the version that came with Exchange Server 5.5 Service Pack 1. It
crashes much less often, and seems to work okay with Mac OS 8.5.

Also, I simply avoid doing my scheduling in Outlook. I use Chronos
Consultant instead, and I am much happier.
