On my Outlook v8.0 (Mac) client, in the Tools:Options menu item, there's a
"Read" card in which you set your preferences for reply formatting. There
are checkboxes for "Include original text", "Indent original text", and a
selection button for the font to be used.

I don't think you can have "partial" quoted text. This you accomplish by
quoting the whole thing and deleting the unwanted portion.

I appreciate you note. Unfortunately, as you can see, that that didn't
work for me on this end. I would expect the same to be true, but I keep
getting the whole header and "replied to message" popping up when I reply.
All I can then do is go and delete most of the text.

The way I did it in Outlook Express was to highlight just your message, and
then click on reply. That way it didn't copy the whole thing
