[WinMac] LAN email

I just set up the following ethernet network
6 macs using Appletalk
ethernet bridge to a local talk laser printer and inkjet printer
Couldn't have been easier

Currently sharing a folder on one machine for some Filemaker programs and data
individual users are sharing folders on each other's machines to access word processing documents
Backing up all the machines to a tape drive using Retrospect

I hope to add two PCs using MacLan so that they can also access the shared Filemaker programs and documents
and use the printers if they want to (they have local printers available).

Thanks for bearing with me so far, by now you know I'm new to this.

A couple of messages on this list started to discuss email and scheduling so now I'm inspired.

Is there a quick and easy way to set up an email system for the users.

I'm doing most of what I want to do with satisfactory speed with the machines set up as peers. I'm not sure what a dedicated server would do for me and I'm not sure where to look for information. A pointer to a site or a book which discuss Apple servers and options would be greatly appreciated.
