Either use

CAP http://www.cs.mu.oz.au/appletalk/atalk.html (on a page with a bunch
of Appletalk-Unix utilities )

or Netatalk http://netatalk.sourceforge.net/faq.php

Netatalk is easier to set up imo.

OSX will work natively with Samba and NFS.
