                My wife's Mac is running Outlook 8.2.1 and is connected with
a couple of
                other Macs and a dozen or so PC's to an Exchange Server
running (of course)
                on a PC. How do I check and/or control the frequency that
her Outlook
                software checks for incoming mail on the server?

I'm not sure about the rest of your questions. But, I don't think you can
adjust when the Outlook client checks for mail. I think there is some
communication with Exchange Server and the client so that the server sends
the mail to the client as soon as it receives it. (But, that's just a
semi-educated guess.) :-)
