I like NT as our file server. Don't have any experience with OS X yet but NT
works great in a cross platform environment (don't think OS X has any
Windows support yet). Make sure you keep up to date with the service packs
though.

Don't use print services for Macintosh however with NT. In the past we would
get loads of Postscript errors coming out of our printers when spooling to
the NT server. I went to a conference last year at Macworld and even a
Microsoft Rep mentioned to not use it.

As far as activating fonts from the server,I've tried that in the past and
had very bad luck with that. I've made a separate partition on each local
computer to store fonts and found that works much better. We are using Font
Reserve 2.5.2 (by the way having very bad luck with that with OS 9 and
multiple users turned on.) and we load lots of fonts in it.

That's my experience for what it's worth.
