Set the folders using the Mac menu of the Server Manager so
that the Owner has full control and no one else has any access. Then
they will see the home directories greyed out and won't be able to
access them.
The other way of doing it is to set the NTFS permissions from
an NT box. Those permissions apply to Macs also and no one other
than the owner will be able to read anything.

The way I do home directories is \\server\home\username
instead of \\server\username. That leaves me with less shares to
worry about.
