[WinMac] Server for Rampage RIP

Win Mac Gurus,
My company is installing an imagesetter later this year. I can't talk my
prepress manager out of using Rampage for the RIP. This solution
requires a high performance NT server for filesharing with our Mac
clients. I would like to build the server (I can get the parts for less
than half of what our vendors are quoting and build a much better
product) but I've never a)set up a raid or b)setup an NT server for
filesharing with Macs. Neither of these two things seems that difficult
but I don't want to hang my neck out there and not be successful!!!

Question 1:
I'm considering an Adaptec AAA-133 3 channel raid controller controlling
two 4.5 gig cheetahs in a mirrored raid (need redundancy for the main
server) and three 36 gig Ultrastar ZX's in a striped raid 5
configuration with parity for the RIP/Mac clients. I need the raid 5
drive broken into 2 volumes (one for the RIP, one for the Mac clients).
Is there a way to do this with the raid controller or will I need to
create the 72 gig volume under raid and then create two partitions under
NT?

Question 2:
Is this correct-all I need to do on the server to install services for
Macintosh, go into the services control panel and enable file sharing
for Macintosh in order to share files with my Mac Clients (OS 8.1 on all
clients)?

Question 3:
Am I really asking for trouble or is this whole process as
straightforward as it seems? I have a list of the hardware I'm using if
anyone needs to look it over before offering up an answer to this last
question...
