Outlook Express would work; I recommend simply setting up a POP server and
SMTP gateway. Then your mac or PC clients can use whatever email they (or
you) want -- Netscape, Outlook Express, Eudora (my fave rave). Check the
appropriate box to leave the email on the server, and they should be able to
get their email from any mac or PC on your LAN. This is a pain becuase you
have to remember to check that box on every computer.

DON'T use something like QuickMail LAN or other proprietary SW. I guess I
can semi-recommend MS Exchange, because of its Outlook Web Access feature,
but I don't think being able to read your email from a Java simulation of
the Outlook client is worth the price you will pay in frustration trying to
get the Microsoft Outlook Client for Macintosh, Exchange Server Edition to
work.

(Example: Article Q189930 in the Microsoft knowledge base describes how to
fix a problem where emails wont open on a mac. The "fix" worked for one
mac, after applying it to the other mac Outlook would quit with a type 3
error upon launch. My point is: go with a standards-based system, not a
proprietary system)

Or, just add a Unix email server running Pine and have all users telnet in
to the server. I _still_ think Pine is the best email client. I still
think sendmail is the best email server. In this day of

IMAP is supposed to be the solution to your problem, but I have never
actually witnessed it in action so I can't speak to its effectiveness.
Netscape Communicator 4.5's mail client includes support for IMAP; I'm sure
others do too.
