PC Compatibility card printing woes

Here's the setup and here's what I'm trying to do:

Power Mac 6500 with a Reply (they've been purchased by Radius) DOS on Mac
7" PCI card. My client uses a program called Strata on the Windows side and
a Mac program called Clients and Profits, and she needs to be able to
switch between the two seamlessly, or I would recommend getting a PC for
this! When we print on the Windows side from Strata, it takes forever to
spool over to the Mac side, then spool off to their network printer. The
folks at Strata confirmed that there is nothing we can do to correct this,
it will take forever, or, they suggested, get a serial printer for the Mac.
OK, so I set up an Epson 800, which prints just fine from the Mac side. I
even updated it with the Postcript driver that comes with the RIP software.
But when I try to print from the Windows side, it spools over to the Mac
side correctly, and then PC Print Spooler loads correctly, but then when
it tries to pass the document, or even just a Windows test page, to Print
Monitor, it chokes with a postscript error. Even after I updated the Epson
to be a postscript printer! There is probably some setting I'm missing
somewhere, but I'm not sure where to look. Ideas?
